Vinificazione
Alcoholic fermentation takes place at low temperature. After pressing, the must ferments partly in 500-litre French oak tonneaux and partly in stainless steel tanks. Following bottling for the prise de mousse, carried out in spring, the wine remains in bottle on the lees for at least 65 months. After this period, disgorgement is carried out without the addition of any liqueur, in order to fully preserve the varietal expression and the mineral character of the soil.
Degustazione
The wine displays an intense straw yellow color, crossed by a fine and persistent perlage in the glass. On the nose, floral and yeasty notes intertwine with hints of toasted bread crust and flint, gradually opening onto fresh, saline and mineral nuances. On the palate, the wine is full and rich, supported by bright acidity; the finesse of the carbonation enhances and extends the persistence, making it precise and versatile at the table.
