Vinificazione

Whole clusters are loaded directly into the press, from which only the free-run juice is selected, allowing the extraction of just enough colour to achieve a delicate rosé hue. Alcoholic fermentation of the base wine takes place entirely in vertical stainless steel tanks. In spring, the base wine is blended and bottled for the prise de mousse, followed by a second fermentation in bottle. Bottle ageing on the lees lasts approximately 18 months.

Degustazione

The wine shows a pale yet bright pink color, enlivened by a fine perlage. On the nose, fresh fruit aromas and red and white floral notes emerge, complemented by a subtle yeasty nuance that adds depth. On the palate, the entry is full and dynamic, with long and persistent freshness supported by a light tannic note that lends austerity and balance.
