Vinificazione
Alcoholic fermentation of the Chardonnay takes place at low temperature, partly in 500-litre French oak tonneaux and partly in stainless steel tanks. Once fermentation is complete, the wine remains on the lees for an ageing period during which several bâtonnage operations are carried out. Bottling for the prise de mousse takes place in spring, with the addition of selected yeasts. This is followed by a second fermentation in bottle lasting 30 months, including the lees ageing period. The bottles are then disgorged and topped up with the same sparkling wine, with no addition of liqueur d’expédition.
Degustazione
The wine shows an intense, bright straw yellow color, with a fine and persistent perlage. On the nose, notes of bread crust and yeast emerge alongside hints of dried fruit, followed by a subtle floral touch on the finish. On the palate, the sip is taut, vertical and precise, driven by lively acidity; the mousse is creamy yet restrained, cleansing the palate and extending the finish.
